In the year 1999 I tasted the first espresso of my life and I loved it, it was a Allpress coffee through a Mazzer grinder and a maroon La Marzocco machine i can still remember it like it was yesterday, i was a young would be chef in training and looked forward to that treat of complex flavors every shift, fast forward a decade and Bobo from Raglan roast was my DJ partner and watching him mix flavors of coffee beans with different roasting parameters was fascinating to me, he viewed coffee beans like I viewed food ingredients pulling multiple flavors together to make one well rounded cup, then as a pipe dream I thought one day I'd like to retire and roast coffee.
Fast forward another few years and my wife and I are in the mobile espresso game to go alongside our mobile catering business, using 100's of kilos of Essenza and Raglan roast coffee at the largest events in the Waikato, Fieldays being one of them..
One Fieldays I was asked to go and see a guy called Peter in a certain shed on site by the site electrician, I knew he meant Peter Allpress, the god of mobile coffee in my eyes, how him and his wife managed to sell the tens of thousands of cups that week was inconceivable, I thought I was in for a telling off for selling coffee on his turf but turns out Peter and his wife Toni put lightley are the most lovely, giving, amazing people on planet earth and we are soo lucky to now call them great friends.
After many cups of Peters Nomad espresso's and a few fixed La Marzocco's later he showed us how and why he roasted his coffee in his very specific way, the knowledge dump has been large, long and insane. his knowledge on the science, mechanics and most importantly flavors of coffee put him on a short list of the true experienced coffee nerds in the country (not that he would say that) him and his brother are a big part of why we have delicious coffee here in NZ
Then Peter retired and left us with only one real option, buy a roaster... A Petroncini was the preferred option and amazingly there was one in the size we needed at the time we needed it.
After acquiring the dream machine Peter came down to put probes into it and property commission it and a roasting we went, after hours of training, help in choosing beans cos he's been to many origins, sending roasts for Pete and Toni to critique, we are ready to release the roasts to the wild in our unconstrained, no bullshit, free to follow the best beans, roasted with love and technical care kinda way.
